Collard Green Chips   Kids Love 'Em!!

1 bunch collard greens

olive oil

salt 

Pre-heat oven to 400. Place foil on baking sheet and spray with non stick product. 

When purchasing, choose dark green collards. After washing thoroughly cut the ends off, then trim the spine about one inch into the large leaf.  You'll be left with the leaf in tact and you should have a small triangle shape cut out of the bottom of your leaf.  Stack the leaves and cut them into chip-like pieces, about 1 x 2 inches each. Place cut leaves in a large bowl, add enough olive oil to cover each leaf (about 3 TSP), add 1 tsp salt and gently mix in the bowl.

Spread cut collards flat on the baking sheet and bake for 10-15 minutes.  Remove from oven, let cool and enjoy! These are a great alternative to potato chips and very high in nutrition.
